"Tortang Talong" or Filipino Eggplant Omelette?


Have you tried our famous "Tortang Talong" or our Filipino Eggplant Omelette? In BAKED?



Tortang Talong 

If not, I dare you to have a taste on it. It is one of our delicious dish in my country. Every kid loves it and it is extremely easy to make one.


Baked eggplant omelette but it is not. Look like baked omelette but it is not. Look baked but cook eggplant omelette. Tortang Talong, Egg omelette, Egg fritatta, Filipino Egg dish, Baked tortang talong, Baked egg omelette

My easy steps:

  1. For the toppings or stuffings it is just a simple egg and ground pork or beef. You can put whatever ingredients you want to make the taste better. 
  2. Boil the eggplant in a couple of minutes. Soft enough to make no. 3.
  3. Forked the eggplant a few times and slice the eggplant using the fork from end to end. You can peel the skin if you want to but for me, It is better if you include it for better plating.
  4. And lastly, put your own egg relish on top of the shredded eggplant and cook it on each side.

For my Egg relish:
  • Onion
  • Garlic
  • Ground Pork
  • Salt, white & black pepper, and choice of herbs & spices.
  • Cornstarch for the consistency.

It is that easy! Proudly saying that mine looks like a baked torta but IT IS NOT, 😎💓 really amazing! The cornstarch (or you can use flour) helps my egg relish to look fluffy and creamy. It is delicious, hoped you like it.

Here's a little story.

So, I ran out of  CORNSTARCH and I'm so dependent on it in making this. But, luckily, I got a few idea from my mom and other recipe on making a thick consistency for your stuffing and it's BREADCRUMBS.


I bought this from SnR Congressional. The consistency became so perfect when I use this Pull-N-Chop container. It use quick, clean, and well mixed-up result for any type you may use. 


And yes, I placed my Cooked Ground Pork with other ingredients such as 2 eggs and flour for best result.


You see. When I flip it on each other sides, my stuffing was well formed into one. Take note that I dipped the eggplant into another bowl of egg before stuffing it for good cover. 


 

Voila! Another perfect and finished product of BAKED TORTANG TALONG.
